Vegetable soup

 

Ingredients:

1 teaspoon vegetable oil
1 onion (1), minced
1 carrot (2), sliced
1 stalk celery (3), sliced

1/2 teaspoon salt (4),
1/4 teaspoon pepper (5),
1/4 teaspoon oregano
1 zucchini or yellow squash (6), diced
2 cups water or chicken stock

2 tablespoons tomato paste

 

Preparation:

______ all vegetables. Pour oil into medium saucepan and turn heat to medium. Add onion and saute for about one minute, stirring frequently.
____ chopped carrot and celery, _______ with salt, pepper and oregano - and continue to saute for another 2-3 minutes. Add squash and _________ for another minute.
____ water or broth over veggies, add tomato paste and bring to a boil.
